My favorite Christmas Cookie of all time is the Red Velvet Cake Whoopie Pie! I have been making these cookies every Christmas for the past eight years and they are always a hit. To be honest, I have no idea where I got the recipe, but it's one of those that's so easy it just stays in my head every year until the following December. They are a little messy to make, but they recipe is simple and they always taste amazing.
Ingredients:
1 Box Duncan Hines Red Velvet Cake Mix
1/3 cup oil
2 eggs
Frosting (store bought or homemade, check out my Perfect Cream Cheese recipe below!)
Directions:
Preheat oven to 350 F. With an electric mixer, mix cake mix, oil and eggs (disregard everything on the back of the box and only use these three ingredients). The dough will be very sticky and a little hard to work with. I find that it is a little easier to work with if you let it sit 5-10 minutes after you mix it. If its still really sticky, you can use a little bit of flour on your hands. Shape dough into small round balls. Remember, two of these will make one whoopie pie so you want to make them a little smaller than you would make regular cookies. Bake for 6-7 minutes. I usually take mine out after 6 minutes as long as the tops are cracked. Transfer to cooling rack and allow to cool completely before assembling Whoopie Pies.
Assembly:
Once the cookies have completely cooled, simply place a small amount of frosting on the underside of one cookie and sandwhich a cookie of similar size on top. I find that piping the frosting onto the back side of the cookie works best and makes the least amount of a mess, but a good ole knife works well too.
Perfect Cream Cheese Frosting
3 oz. cream cheese
1/2 cup softened butter
1tsp vanilla
2 cups powdered sugar
Mix cream cheese, butter and vanilla together with an electric mixer. Once combined, gradually add in powdered sugar until you reach the desired consistency.
